Best of PeLe!*

At the 1970 finals in Mexico, the 29-year-old Pelé, led one of the greatest teams ever assembled to win Brazil's third World Cup. In the 4-1 title triumph over Italy, Pelé, scored a glorious goal. It was Brazil's 100th World Cup goal, and the one he remembers the most.

At the club level he shattered records in Brazil. He scored 127 goals for Santos F.C. in 1959, 110 in 1961 and 101 goals in 1965, and led the club to two World Club championships.

Pelé also holds the world record for hat tricks (92) and the number of goals scored on the international level (97). His statistics are all the more amazing when compared to today's top players who can barely score more that 30 goals in a season.

It's been awhile...

It has been forever since i've written!  To start off, Thursdays have been a blast!  And playing soccer is a blast but I've heard from a few people that don't want to play soccer for awhile.
So I guess were going to be playing different games!  And then we'll go back to good 'ol soccer!    And other things!  I've also been thinking about taking a hike out here in the meadows up to the tower!  What do y'all' think?  When would be the best time for you all?  I've also been debating when to do a game night so I was thinking maybe this Friday?!  Possibly?  And maybe playin some outdoor games instead of Catan.
And hopefully doing a devotional!  So leave comments to let me know!

Too much to Post about...

Wow I feel I've neglected blogging!  :) Anyway, my week's been really busy with Easter, Cleaning, making dinner and so on...  
 I've recently found a couple newer songs I like! Better Together By Jackson Johnson, New soul By Yael Waim, Lucky By Jason Mraz & Colbie Caillat,
Thanks Again (It's more of a Country song) By Ricky Skagg's, Realize By Colbie Caillat and that 
completes my list!  
I've also been wanting to plan a Settler's of Catan Party!  We just received
two new boards, one is Seafarers Catan and the Original Settler's Catan!  
  And I just tried an easy
dessert from Cooks illustrated!  Chocolate Mousse really good!  here's the recipe!  

DARK CHOCOLATE MOUSSE

Makes 3 1/2 cups (6 to 8 servings).   Published January 1, 2006.  

When developing this recipe, we used our winning supermarket brand of dark chocolate, Ghirardelli bittersweet, which contains about 60 percent cacao. If you choose to make the mousse a day in advance, leave it out at room temperature for 10 minutes before serving. Serve with very lightly sweetened whipped cream and chocolate shavings. A hand-held mixer can do the job of a standing mixer in this recipe, though mixing times may vary slightly.

INGREDIENTS

8ounces bittersweet chocolate , chopped fine
2tablespoons cocoa powder (preferably Dutch-processed)
1teaspoon instant espresso powder
5tablespoons water
1tablespoon brandy
2large eggs , separated
1tablespoon sugar
1/8teaspoon table salt
1cup heavy cream , plus 2 additional tablespoons (chilled)

INSTRUCTIONS

  1. 1. Melt chocolate, cocoa powder, espresso powder, water, and brandy in medium heatproof bowl set over saucepan filled with 1 inch of barely simmering water, stirring frequently until smooth. Remove from heat.

  2. 2. Whisk egg yolks, 1 1/2 teaspoons sugar, and salt in medium bowl until mixture lightens in color and thickens slightly, about 30 seconds. Pour melted chocolate into egg mixture and whisk until combined. Let cool until just warmer than room temperature, 3 to 5 minutes.

  3. 3. In clean bowl of standing mixer fitted with whisk attachment, beat egg whites at medium-low speed until frothy, 1 to 2 minutes. Add remaining 1 1/2 teaspoons sugar, increase mixer speed to medium-high, and beat until soft peaks form when whisk is lifted, about 1 minute. Detach whisk and bowl from mixer and whisk last few strokes by hand, making sure to scrape any unbeaten whites from bottom of bowl. Using whisk, stir about one-quarter of beaten egg whites into chocolate mixture to lighten it; gently fold in remaining egg whites with rubber spatula until a few white streaks remain.

4. In now-empty bowl, whip heavy cream at medium speed until it begins to thicken, about 30 seconds. Increase speed to high and whip until soft peaks form when whisk is lifted, about 15 seconds more. Using rubber spatula, fold whipped cream into mousse until no white streaks remain. Spoon into 6 to 8 individual serving dishes or goblets. Cover with plastic wrap and refrigerate until set and firm, at least 2 hours. (The mousse may be covered and refrigerated for up to 24 hours.)

Some really Delicious Bread!

I have been making bread all week and love the recipe I'm using!  It's called  
All American Sandwich Bread,  out of the "Best Recipe" Cookbook.  Here's the recipe!
All American Sandwich Bread
  •  3 1/2 cups flour
  • 2 tsp salt
  • 1 cup warm milk (110 degrees)
  • 1/3 cup warm water (110 degrees)
  • 2 Tbl butter melted
  • 3 Tbl honey
  • 1 package (about 2 1/4 tsp) rapid rise yeast.  
 1.  Adjust oven rack to low position and heat oven to 200 degrees for ten
 minutes, then turn off oven.  2.  Mix flour and salt in kitchen aid mixing bowl, fitted with dough hook.  Then mix milk, water, honey, butter and yeast in a small separate bowl.  Turn mixer on low and add liquid bowl in slowly.  Place dough on floured work surface and knead for 15 seconds.  3.  Place dough in lightly oiled bowl, rubbing
dough around bowl to lightly coat. 
 Cover 
with plastic wrap; place in warm oven to rise for 40-
50 minutes.  4.  Gently press dough into rectangle 1 inch thick and no longer than 9 inches.  With long side facing you, roll dough firmly into cylinder, pressing with your fingers to make sure dough sticks to itself.  Turn dough seam side up and pinch it closed.  Place dough in greased 9 x 5 x 3- inch loaf pan and press it gently.  5.  Place in oven to rise the second time for 20-30 minutes.  Heat oven to 350 an
d bake bread for 30- 40 minutes!  And wa-lah!!!

Chocolate peanut butter milk Shakes!

I just made some Chocolate peanut butter milk shakes today.  It's  Hutton and Racer's 
favorite!  I think they turned out quite well...  Her
e's the recipe!  
  • 4 cups of vanille ice cream
  • 1/4 cup peanut butter (you can add more if you like more peanut butter)
  • Hersheys dark chocolate to your liking!
  • 1/4 cup milk

A couple things from my past week...

Last week Pear spent the night and had a slumber party with Taffi, Libbi and Aspen, I  got a couple pictures when she was here.  There's never a dull moment!  She made Jello, painted, watched Toy story and played toys non stop!  While she was here, Stephen and Paige went to Seattle and had an appointment with a specialist for Paige's Colistasis.  On Thursday Pear left and we headed to Home school sports!  There were barely any people there but it was still tons of fun!  Sam was there and is staying for two weeks (He's on spring break).  We played sprout ball with Sam and Robby, Robby won the first game then the second game nobody won...  It was fun!  Then came skating!  There were more people at skating then there where at P.E.  That was also alot of fun!   Afterwards  the Cooper's, Katie, Becca and Seth and my family all went to McDonald's (not the best food but it was fun visiting:)anyway My week was a Blast!   I also tried a new pizza crust recipe!  It was pretty good, I made a pineapple pepperoni, Cheese and  pepperoni.  Here are a couple pics I took.
